Candy Making

Cook sugar to the right degree and turn it into sweets you made yourself.

You can start in the kitchen you already have, with a stove, a mixer and a deep pot. Candy making is the craft of cooking sugar syrup to an exact temperature and setting it into something chewy, fluffy or glassy: soft marshmallows whipped from a 240°F syrup, fruity gummies set with gelatin, and clear hard-candy lollipops poured at 300°F. A thermometer does most of the guessing for you, a batch takes about an hour of hands-on time, and a bag of homemade candy is an easy gift.

01

What candy making actually involves

Almost every candy starts the same way: sugar, water and corn syrup boiled until enough water cooks off that the syrup reaches a set temperature. That number decides the texture. Around 240°F (the soft-ball stage) gives chewy, whippable syrup for marshmallows; 300°F to 310°F (hard crack) gives glassy candy for lollipops. Gummies sit apart because gelatin does the setting, so they never need a thermometer. A session is mostly measuring and waiting, then a few minutes of fast work once the syrup hits its number, followed by hours of setting on the counter or in the fridge.

Where to go after your first batch

Marshmallows first, then gummies or lollipops

Open a direction to see what to do first. Marshmallows use the base kit; the gummy and lollipop buttons add their molds and extras to the candy tin.

Marshmallow makingThe base kit is built around it, so it is everyone's first batch. Syrup only goes to 240°F, which makes it the gentlest way to learn the pot.

Start here

Make the linked marshmallow recipe with the base kit this week, then cut your second batch into small cubes for hot chocolate.

Gummy makingWarm fruit juice with sweetener and gelatin, then fill small molds with a dropper and chill. Little heat is involved, so it is the one to do with kids.

Start here

Buy a bottle of 100% fruit juice and a lemon, bloom the gelatin, and fill a set of gummy molds with the dropper. It is the calmest batch to make with kids.

Bigger Bolder Baking: Homemade Gummy Bears
Lollipop makingCook syrup to 300°F and pour it into heat-rated molds around a stick. The hottest and fastest of the three, so save it until the pot feels familiar.

Start here

Once a marshmallow batch has gone well, set the sticks in heat-rated molds first, then cook a dozen lollipops to 300°F and pour.

03

Hot sugar safety

  • Cooked sugar runs from 240°F for marshmallows to past 300°F for lollipops, far hotter than boiling water, and it sticks to skin while it burns. Treat the pot like hot oil.
  • Use a deep, heavy-bottomed pot no more than about a third full. Syrup foams up as it boils, and a thin pan scorches and boils over.
  • Keep children and pets out of the kitchen while syrup is on the stove or being poured. Gummies are the step kids can help with.
  • Set a bowl of cold water by the stove before you start. If syrup lands on skin, plunge it in cold water right away and keep it there; get medical help for a large or blistering burn.
  • Never taste from the pot or the spatula. Let a drip cool on a plate first, and wait until a poured candy is fully set before touching it.
  • Wear long sleeves and closed shoes, and turn the pot handle in from the counter edge so nobody catches it.
  • Use only molds labeled food-safe and rated above the temperature you pour at. Hard candy at 300°F needs silicone rated to about 400°F or more; thin plastic chocolate molds warp and can leach at that heat.
04

Your first batch, step by step

What you can make in your first month

Vanilla marshmallows

A 9x13 pan of soft squares, the most forgiving way to learn cooking syrup to 240°F.

Cocoa marshmallow cubes

The same batch cut small and tossed in confectioners' sugar, sized to float in hot chocolate.

Fruit-juice gummies

Bright gummies set from juice and gelatin in an afternoon, cooled in the fridge rather than cooked hot.

A dozen hard-candy lollipops

Clear, single-color suckers poured at 300°F once you are comfortable with the pot.

05

The skills that make good candy

Choosing and trusting a thermometer

Look for a clear 100°F to 400°F scale, a clip that holds it on the pan wall, and a tip that sits in the syrup without touching the bottom. A cheap one is fine once you have checked it in boiling water.

Reading the pot

Pull it a degree or two before the target, since the heat keeps climbing after it leaves the burner, and ease the burner down past 280°F, where syrup rises fast and scorches.

Stopping crystals

Dissolve the sugar fully before the boil, then stop stirring. If crystals cling to the pan walls, put the lid on for two minutes so the steam washes them down, because one stray crystal can turn a batch grainy.

Handling gelatin

Bloom it in cold liquid first and never boil it, or it loses its setting strength.

Working fast and clean

Have molds, sticks and greased tools ready before the syrup hits its number, and fill the hot pot with water straight away so hardened sugar dissolves on its own.

Swirl and twist lollipops in a jar

06

What trips beginners up

Crystals, humidity and patience

  • Expect a grainy or sticky batch or two. Most failures come from temperature or crystals, not the recipe.
  • Humidity matters: hard candy turns tacky and marshmallows stay soft on damp, rainy days, so cook on dry days and store everything airtight.
  • Setting takes longer than the cooking. Marshmallows need hours on the counter and gummies need the fridge, so plan the cutting for the next day.
  • A thermometer that reads 5°F off quietly ruins batches, which is why the check comes before every session.
  • Do not put a cold or wet tool into hot syrup; it can seize the sugar or spit.
07

If you avoid gelatin

Gelatin comes from animals, so it is out for vegetarians and vegans and for some religious diets. Gummies can be set with agar powder instead (it gives a firmer, less bouncy chew and has to be boiled briefly to set), and lollipops contain no gelatin at all. Gelatin-free marshmallows need a whipped bean-liquid recipe and are a project for later, once the standard batch works.

08

Why the kit looks like this

The base kit is the linked marshmallow recipe's shopping list plus the tools that keep you safe at the stove: a thermometer, a deep heavy pot, a heat-proof spatula and a dish to set the batch in. The thermometer and pot are the only real outlay, and both carry over to every candy you make later. Gummy and lollipop gear sits behind its own add-on, because each needs molds the other cannot use. If your kitchen already has a mixer, a 9x13 dish or salt, use those and switch the lines Out.

09

Fill the candy tin

The first eleven lines are the base kit: the tools for the stove and every shelf-stable ingredient in the marshmallow recipe. Silicone mitts are worth adding for everyone. The gummy and lollipop lines start out of the tin until you switch on that add-on. Clicking a card selects it in the tin, and clicking the selected card again takes that line out.

Candy thermometer

Essential · Core equipment

Candy texture is decided by a few degrees, and a thermometer is the only reliable way for a beginner to hit 240°F or 300°F.
