Starter guide · Dissolve, boil, pull

Caramel Making

Turn plain sugar, butter and cream into sauce, chewy caramels, toffee and fudge.

You can start caramel making with the kitchen you already have: a stove, a measuring cup and a bag of sugar. Caramel is sugar cooked until it melts, browns and turns nutty, then softened with butter and cream. Stop at a pourable sauce, cook it a few degrees further for soft chewy caramels, take it to the hard-crack stage for toffee, or hold it at soft ball and beat it for fudge. A batch takes under an hour, costs a few dollars in ingredients, and ends with something you can jar, wrap and give away. The skill is all in reading temperature and color, which is why a good pan and an accurate thermometer matter more than any recipe.

What caramel making involves

Every session is the same core move: dissolve sugar, boil it, and stop at the right moment. For sauce you judge by color, pulling the pan when the syrup turns a copper-penny amber and then whisking in butter and cream. For candy the thermometer decides. Fudge stops at the soft-ball stage (about 234-240°F), chewy caramels at the firm-ball stage (about 245-250°F), and toffee and brittle at hard crack (about 295-300°F). A few degrees separate a caramel that pulls from one that sticks to your teeth, so most of the craft is patience at the stove and an accurate reading. The cooking itself takes 15 to 45 minutes; candies then rest a few hours or overnight before you cut them.

Three directions to take it

Sauce and soft caramels, toffee, fudge

Caramel sauce and soft caramelsThe base of the hobby. Sauce is the easiest first win, and chewy wrapped caramels are the same syrup cooked longer with cream, butter and corn syrup. The base kit covers both.

Start here

Make the caramel sauce recipe this week, then halve the soft caramel recipe and cook it to 248°F once the sauce feels easy.

Toffee makingButter and sugar cooked to hard crack, poured thin, and usually topped with chocolate and nuts. It is fast (about 20 minutes on the stove) but the hottest syrup you will handle. Brittle is its cousin, made with nuts stirred into the syrup instead of on top.

Start here

Make a pan of buttercrunch toffee: take the syrup to 295°F, pour it into a lined 9 x 13 pan, and top it with melted chocolate and toasted nuts.

King Arthur Baking: Dark Chocolate Buttercrunch
Fudge makingA dairy-and-sugar syrup cooked only to soft ball, then stirred as it cools so it sets creamy instead of chewy. It is the gentlest temperature of the three and a good way to learn how much a few degrees change the texture.

Start here

Cook a stovetop peanut butter fudge to 234-236°F, stir in the marshmallows and peanut butter off the heat, and let it set overnight in your square pan.

King Arthur Baking: Peanut Butter Fudge
03

Hot sugar safety

  • Cooked sugar runs from about 240°F to 300°F, far hotter than boiling water, and it sticks to skin while it burns. Treat every pan of caramel like hot oil.
  • Use a deep, heavy pot that holds at least three times the volume of the ingredients. When cream or butter goes into hot caramel it foams up violently and can climb the sides of a small pan.
  • Add dairy slowly, a little at a time, at arm's length, using a long-handled spatula or whisk. Warm the cream first so it spits less, and keep your face out of the steam.
  • Keep children and pets out of the kitchen while sugar cooks and while the pan cools. Never leave a pan of caramel on the stove unattended.
  • Keep a bowl of cold water next to the stove. If caramel lands on skin, plunge it straight into the cold water to stop the burn, then cool it under running water for 10 minutes. Get medical care for any burn larger than a coin, or one that blisters on the face or hands.
  • Never taste from the pot or lick the spatula. Drop a little syrup onto a cold plate and wait until it is completely cool before touching it.
  • Wear closed shoes and long sleeves, and use long silicone mitts when you pour or lift the pot.
04

Choosing your pot and thermometer

  • Pick a heavy, thick-bottomed stainless steel saucepan of 3 quarts or more. A thin pan scorches sugar in hot spots before the rest has colored.
  • Choose a light, shiny interior over a dark nonstick one. You judge caramel by color, and you cannot see amber against a black pan.
  • Tall sides beat a wide shallow pan: they contain the foaming when the dairy goes in and give a thermometer enough depth to read.
  • Get a thermometer that reads to at least 400°F and clips to the side of the pot, so the probe sits in the syrup without touching the bottom.
  • Before each session, test the thermometer in boiling water. It should read about 212°F at sea level, about 1°F less for every 500 feet of altitude. If it is off, adjust every target in the recipe by the same amount.

Caramel sauce

The first batch teaches you to read amber color and add cream safely, and it keeps for weeks in the fridge.

06

Skills to practice early

Color, temperature, crystals, cutting

Reading color

Straw, gold, amber and copper each taste different. Make a batch where you pull it early and one where you push it darker to learn where you like it.

Hitting a temperature

Clip the thermometer before the syrup boils, read it at eye level, and pull the pan a degree or two early because the heat carries on.

Preventing crystals

Swirl rather than stir before the sugar dissolves, add a pinch of cream of tartar or some corn syrup, and if crystals cling to the pan walls, cover the pot for a minute so the steam washes them down.

The cold-water test

Drop a little syrup into ice water and feel the ball it forms. It is your backup when a thermometer fails, and it teaches you what soft, firm and hard crack actually mean.

Cutting and wrapping

Cool caramels fully, cut them with a buttered knife, and wrap them the same day so they keep their shape.

07

What trips beginners up

  • Expect a grainy or seized batch early on. Sugar that recrystallizes turns sandy; it is a stirring and splashing problem, not a recipe problem.
  • Expect a burned batch too. Caramel goes from amber to bitter in under a minute, so the first few take your full attention.
  • Soft caramels take patience: the last 20 degrees climb slowly, and a full batch can take an hour to reach 248°F.
  • Humid days make candy softer and stickier. Toffee and caramels set best on dry days.
  • Stop stirring sugar syrup before it has dissolved, and stop walking away "for just a second".
  • Test the thermometer every session rather than trusting it. A probe that reads 5°F low turns chewy caramels into hard ones.
  • Warm the cream and add it in stages: cold cream poured in all at once seizes the caramel into lumps and makes the pot foam over.
08

About the kit

Most of the money goes on two things: a heavy pot that heats evenly and a thermometer you can trust. Everything else is cheap. The ingredient lines cover the shelf-stable parts of the caramel sauce and soft caramel recipes; butter, heavy cream and half-and-half come from the grocery store. The toffee and fudge add-ons hold what those recipes need beyond the base kit. For a dairy-free caramel, swap the cream for full-fat canned coconut cream and the butter for a plant-based butter; nothing else in the kit changes.

A bar of chocolate fudge cut into slices and topped with flaky salt, a knife in front
Fudge, sliced once it has set
09

Fill the caramel tin

The first five lines are the pot, the thermometer, the spatula, sugar and vanilla. With the cream of tartar and flaky salt below them, that covers the caramel sauce apart from butter and cream. The corn syrup, brown sugar, square pan and wrappers add the soft caramel recipe, and the mitts are for handling hot syrup. Toffee and fudge lines stay out of the tin until you add that branch. Clicking a card selects it in the tin, and clicking the selected card again takes that line out.
