Cooking

Learn a handful of core techniques and cook real meals from scratch.

You already have the main piece of equipment: a kitchen with a stove, an oven and a sink. Cooking as a hobby means learning the few techniques nearly every recipe is built from (cutting, sautéing, roasting, simmering, seasoning to taste) until you can cook a weeknight dinner without a recipe propped open and follow any recipe you find with confidence. The first wins come fast: a good plate of eggs on day one, a roasted tray of vegetables and a properly cooked piece of chicken within the first week or two. A small kit of one sharp knife, a board, a couple of good pans and a thermometer covers nearly all of it. People stay with it because a home-cooked dinner costs a fraction of takeout and tastes better once you know what you are doing.

01

What learning to cook involves

Cut, heat, taste, repeat

Most home cooking comes down to a few moves done well: cutting ingredients to an even size, controlling the heat under a pan, roasting in a hot oven, simmering in a pot and tasting as you go. A typical session is an hour or so on your feet at the counter and stove: reading the recipe through, prepping everything before the heat goes on, cooking, then cleaning up. Early on, cook the same few dishes several times rather than a new recipe every night. Repeating a dish is how you learn what done looks, smells and sounds like, and that judgment is what lets you cook without a recipe later.

02

Five skills to learn first

Knife work

Hold the handle with your thumb and forefinger pinching the blade, curl the fingertips of your other hand under so your knuckles guide the knife, and practice dicing an onion and mincing garlic until the pieces come out even.

Heat control

Preheat the pan before food goes in, add oil when the pan is hot, and wait for it to shimmer. Medium heat is for eggs and gentle cooking, medium-high for browning, and a crowded pan steams instead of browns.

Seasoning to taste

Salt in stages (the cooking water, the raw ingredients, a final check) and taste before serving. If a dish tastes flat, it usually needs salt or a squeeze of lemon or a splash of vinegar.

Cooking to temperature

Use the instant-read thermometer on every piece of meat, poultry and fish until you know what done looks like, and keep using it on poultry and ground meat.

Prepping before you cook

Read the whole recipe first, then measure and chop everything into bowls before turning on the burner, so nothing burns while you hunt for an ingredient.

03

Choosing and caring for your knife

Size

An 8-inch chef's knife handles nearly every job a beginner has. A 6-inch one is fine if your hands are small or your counter is short.

What to check

A handle that feels secure when wet, a blade that rocks smoothly on the board, and enough clearance under the handle that your knuckles do not hit the board when you chop. Stamped blades are lighter and cheaper than forged ones and cut just as well when sharp.

Keep it sharp

A sharp knife is safer than a dull one because it bites into food instead of skidding off. Test it on a tomato or a sheet of paper; when it starts to crush or tear, have it sharpened (many kitchen stores and farmers' markets offer it for a few dollars).

Daily care

Wash and dry it by hand right after use, never leave it in the sink or dishwasher, and store it in a block, a magnetic strip or a blade guard instead of loose in a drawer.

04

Kitchen safety: knives, burns, fire and food

Knives

Lay a damp paper towel under the board so it cannot slide, keep the fingertips of your guiding hand curled, and cut flat sides down so round vegetables cannot roll. If a knife falls, step back and let it drop; never try to catch it.

Burns

Turn pot handles toward the back of the stove, use dry oven mitts (a damp one passes heat straight to your hand), and pat food dry before it goes into hot oil. Set food into hot oil edge nearest you first and let it fall away from you, so splatter goes toward the back of the stove. A pan that just came out of the oven stays hot for a long time, so leave a mitt on its handle as a reminder.

Grease fires

If oil in a pan catches fire, turn off the burner and slide a lid or a sheet pan over it, and leave it covered until it cools. Never pour water on it and never carry the pan. For an oven fire, turn the oven off and keep the door shut. If the fire is not out in a few seconds or is spreading, leave and call 911.

Fire prevention

Stay in the kitchen while anything is frying, searing or broiling, keep towels, mitts and paper away from the burners, and heat oil only until it shimmers. Oil that starts to smoke is too hot, so take the pan off the heat.

Cross-contamination

Wash your hands with soap for 20 seconds after handling raw meat, poultry, fish or eggs. Cut produce before raw meat, or wash the board and knife in hot soapy water between them, and do not rinse raw chicken (it splashes bacteria around the sink).

Safe internal temperatures

Poultry and anything containing it 165°F; ground beef and pork 160°F; whole cuts of beef, pork, veal and lamb 145°F followed by a 3-minute rest; fish 145°F; dishes made with eggs 160°F. Check the thickest part with the thermometer, away from bone. Soft-cooked eggs carry a small risk, so cook them until set for young children, pregnant people and older adults, or use pasteurized eggs.

Leftovers

Refrigerate cooked food within 2 hours (1 hour if the room is above 90°F), split big batches into shallow containers so they chill quickly, keep the fridge at 40°F or below, eat leftovers within 3 to 4 days, and reheat them to 165°F.

Where cooking can take you

Open the card to see where to start

Recipe developmentTurning dishes you cook by feel into tested, written recipes with exact amounts, by changing one thing at a time and keeping notes until the result is reliable.

Start here

Pick one dish you already cook well, cook it three times this month changing only one thing each time (salt, heat or timing), and write down the amounts and what changed.

America's Test Kitchen: The Five-Recipe Test

The button inside the card adds a scale and a recipe journal to your station. You can still drop either one there.

06

How to get started

Your first week, in order

What you can cook in your first month

Soft scrambled eggs

A 10-minute lesson in medium heat, constant stirring and pulling the pan off before the eggs look done.

A tray of roasted vegetables

Chopped evenly, tossed with oil, salt and pepper, and roasted hot so the edges brown instead of steaming.

Pan-seared chicken thighs

Browned in the stainless skillet and checked with the thermometer until they read 165°F in the thickest part.

Pasta with a garlic and oil sauce

Boiled in salted water, then finished in the skillet with garlic, oil and a splash of the pasta water.

A three-dish dinner for two

A protein, a roasted vegetable and a pot of rice, planned so everything is ready at the same time.

07

What trips beginners up

What to expect, and what to stop

  • Expect timing to be the hardest part at first: getting two or three things ready together takes practice, so start with one-pan meals and add a side once those feel easy.
  • Expect a few burned or bland dishes. Each one teaches you where your stove runs hot and how much salt your taste wants.
  • Expect slow prep. Chopping an onion may take 10 minutes in week one and 2 minutes a couple of months later.
  • Stop crowding the pan: food packed edge to edge steams and turns gray. Cook in batches or use the sheet pan.
  • Stop flipping and stirring constantly: meat and vegetables brown only when left alone against the hot surface for a few minutes.
  • Stop starting before everything is prepped: measure and chop first, then turn on the heat.

08

Where to learn more

Free recipe sites that test their recipes and explain why each step matters are the best teachers at the start. Pick one or two you like and cook from them for a month so you get used to how they write. A local community college, cooking school or kitchen store often runs low-cost hands-on knife skills classes, which are worth one evening if you can find one.

09

About the kit

Check your cupboards before buying: many kitchens already have a usable pan, a bowl or a set of measuring cups, and you only need to fill the gaps. Spend on the knife and the thermometer first. A comfortable, sharp knife makes every session easier, and the thermometer is what makes cooking meat and poultry safe. The nonstick skillet is for eggs and delicate food on medium heat, while the stainless skillet takes the high heat browning needs and can go into the oven. Salt and pepper are the only shelf-stable ingredients the first recipe needs, and the oil covers the roasting and searing in the first month. The fire extinguisher is cheap insurance for the one emergency every cook should be ready for. The recipe development lines are only for that direction.

10

Set up your station

Compare the options below, then set your tiers and check out from the station list. Clicking a card selects it there, and clicking the selected card again takes that line out. Every essential and recommended line starts in. The scale and recipe journal belong to recipe development, so they stay out until you add that direction.
