Starter guide · Italy, France and the Mediterranean

European Cooking

Slow braises, bright sauces and good olive oil, cooked in your own kitchen.

You can start European cooking with the kitchen you already have: a knife, a cutting board, a wooden spoon and a stove. It is the home cooking of Italy, France and the Mediterranean coast, built on a few classic techniques (sweating onions slowly, browning meat, deglazing the pan, braising low and slow, whisking an emulsified sauce) and a short list of pantry staples like olive oil, canned tomatoes, vinegar and dried herbs. The same few techniques carry over to hundreds of dishes, from a chicken cacciatore to a risotto, a pan sauce or a Greek salad. The appeal is food that tastes deep and finished with ordinary ingredients, and the patience it rewards.

01

What European home cooking actually is

Sweat, sear, deglaze, braise

Most of what people call European cooking comes down to a handful of methods repeated across countries. A base of onion, carrot and celery (soffritto in Italy, mirepoix in France) cooked gently in fat. Meat or vegetables browned hard so they leave a dark crust in the pan, then wine or stock poured in to lift that crust into a sauce. Long, quiet braising in a heavy covered pot. Sauces finished with a whisk, a knob of butter or a splash of vinegar. A typical session is an hour or two at the stove, much of it the pot simmering while you set the table.

Three ways in

Italian cookingSlow tomato sauces, braises and risotto, where a few good ingredients carry the dish.

Start here

Make a pot of risotto this week: toast the rice in butter, add the wine, then the hot broth, and stir only at the end.

Whisk a mustard vinaigrette tonight, then use the same whisking habit for a pan sauce after you sear a chicken breast.

Start here

03

The five techniques to learn first

I

Sweating aromatics

Onions, garlic and peppers cooked over medium-low heat until soft and sweet, never browned and bitter.

II

Browning

Dry the meat, heat the pan until the oil shimmers, and leave each piece alone until it releases on its own.

III

Deglazing

Pour wine or stock into the hot pan and scrape up the browned bits, which become the backbone of the sauce.

IV

Braising

A covered heavy pot at a low simmer (or in a 300 to 350°F oven) until meat is tender enough to pull apart.

V

Emulsifying

Whisk oil slowly into vinegar and mustard, or butter into a reduced pan sauce, so it turns glossy instead of greasy.

04

Choosing your braiser

Wide, heavy, enameled, oven-safe

Size

A 3.5 to 4 quart braiser feeds two to four people and fits chicken pieces in one layer, which matters for browning.

Shape

A wide, shallow pot browns better and reduces sauce faster than a tall one, and still makes risotto.

Material

Enameled cast iron holds steady heat, needs no seasoning, and goes from stovetop to oven.

Check before buying

A lid that sits flat, an oven-safe knob (many are only safe to about 400°F), and enamel without chips or rough spots inside.

Before each session

Heat it gradually over medium for a few minutes rather than blasting it empty on high, which can crack the enamel.

05

Your first week

What you can cook in your first month

Chicken cacciatore

A one-pot braise that teaches browning, sweating onions and simmering in tomato.

Mustard vinaigrette

A three-minute emulsion that makes every salad taste like a bistro's.

Risotto with Parmesan

A lesson in toasting rice and judging doneness by texture.

Greek village salad

No cooking, just good tomatoes, olives, feta, oregano and olive oil.

Pan-seared chicken with a quick pan sauce

Wine and mustard whisked into the browned bits.

06

What trips beginners up

  • Expect your first braise to take longer than the recipe says. Tender is a texture, not a time.
  • Expect a vinaigrette or pan sauce to break once or twice before the whisking rhythm clicks.
  • Expect a few dishes to taste flat at first. That is usually salt or acid, not a missing ingredient.
  • Crowding the pan: too many pieces at once steam instead of brown. Work in batches.
  • Moving meat too early: if it sticks, it is not ready to turn yet.
  • Cooking garlic on high heat: it burns in seconds. Add it after the onions soften.
  • Cooking with your best olive oil at high heat: save the most flavorful bottle for finishing and salads.
07

Where to keep learning

Free recipe sites with tested methods are the best teachers here, because they explain why a step matters. Cook one dish several times before moving on, and note what you changed each time.

08

How the kit is built

The kit assumes you already own a chef's knife, a cutting board, and a wooden spoon. The one real spend is the braiser, which does the browning, braising and risotto work for every direction. The rest is pantry: a good olive oil, canned tomatoes, salt, peppercorns, bay leaves and a red wine vinegar together cost less than one restaurant meal and last for many dinners. Switch on a cuisine in the larder to add its few extra items.

Fill the larder

One pot, a short pantry

Every line below can be bought online; the chicken, onions, garlic and wine come from the grocery store. Compare the options and set your tiers in the larder. Clicking a card selects it there, and clicking the selected card again takes that line out of the kit.
