Starter guide · Grain in, flour out

Home Flour Milling

Turn whole grains into flour minutes before you bake with it.

You can taste what this hobby is about before buying anything: a blade coffee or spice grinder you may already own will turn a few small batches of wheat berries into coarse whole grain flour. Home flour milling means grinding whole grains (wheat berries, mostly) into flour in your own kitchen, right before you bake. Because the whole kernel goes in, the bran, germ and their oils all end up in your bread, flatbread or porridge, and the flavor is noticeably sweeter and nuttier than bagged whole wheat. A countertop mill lets you set the texture, and since fresh flour does not keep long, most millers grind only what the next bake needs.

01

What milling at home actually involves

Weigh, mill, mix, bake

A milling day usually fills an afternoon, though the milling itself takes minutes: you weigh out wheat berries, set the mill's fineness, pour them into the hopper and catch warm flour in a bowl. A countertop electric mill grinds about a pound in a few minutes. The rest of the time goes to mixing, resting and baking, and most of the craft is learning how fresh whole grain flour behaves in dough.

02

Why people mill their own

Flavor that only exists fresh

The taste fades as milled flour sits and its oils oxidize, so grinding minutes before baking is the only way to keep it.

Whole grain on your terms

You choose the grain, the variety and the fineness, from coarse cereal to fine flour.

A deep pantry

One bucket of grain covers months of baking, and it takes far less shelf space than the same weight in flour bags.

Cost over time

Wheat berries bought in bulk cost less per pound than bagged whole grain flour, which offsets the mill over a few years of regular baking.

03

Choosing a mill and setting it up

Stone or impact

Stone (burr) mills grind between two stones, run quieter and adjust from cracked grain to fine flour; impact mills shatter grain with fast steel fins, are cheaper and very fast, but only make flour (no coarse setting) and are louder.

Read the grain list first

The manual says what the mill can take. Stone mills generally handle dry wheat, rye, spelt, rice and oats, but oily seeds (flax, sunflower), nuts, coffee and damp or sprouted grain can glaze or crack the stones, so mill only what the manual allows.

Check before buying

A fineness control you can reach easily, a hopper that holds at least 2 lb, a motor rated for milling a few pounds at a time, replaceable stones or a long warranty, and a flour spout that drops cleanly into a bowl.

Before each session

Confirm the grain is dry and free of stones or debris, set the fineness, and start the motor before pouring grain if the manual says so. Many stone mills need the stones opened slightly before starting so they do not grind against each other.

After milling

Run the mill empty for a few seconds to clear it, then brush out the spout. Never wash stones with water.

04

Your first milling day

Season the mill, store the grain, make chapati

What you can mill and make in your first month

Whole grain chapati

A flour, salt, oil and water flatbread that shows off fresh flour's flavor.

Whole wheat crackers

Roll the chapati dough paper thin, score it and bake it until crisp.

A milling notebook

Weigh berries in and flour out for each batch and note the water each dough took, so every bake starts from your own numbers.

A labeled freezer stock

Mill a week's worth of flour, portion it by weight, and freeze it so weeknight baking needs no milling.

05

Working with fresh flour

  • Your first loaves and flatbreads will be denser than white-flour versions. That is how 100 percent whole grain behaves, not a sign the mill is wrong.
  • Weigh rather than scoop. Fresh flour is fluffy and warm, so a cup can weigh 10 to 20 percent less than packed bagged flour.
  • Start with recipes written for whole wheat flour. In a white-flour recipe, swap fresh flour in for a quarter to half of the flour until you know how it behaves.
  • Use the finest setting for bread and flatbread. Coarse particles cut through gluten and give crumbly results.
  • Sifting out the coarsest bran (the result is often called high-extraction flour) gives softer flatbreads and higher loaves; stir the bran into porridge.
  • Hard wheat, red or white, has more protein and suits bread and flatbreads, while soft white wheat makes tender pancakes, muffins and cookies. Hard white tastes milder, which is why most people start with it.
  • A mill running several pounds back to back gets warm, so mill in batches and let it rest as the manual advises.

Food safety and storage

Raw flour is not ready to eat

Grain is a raw farm product and can carry germs like E. coli. Do not taste raw dough or batter, and cook or bake everything you make with your flour. Fresh-milled flour is no exception.

Fresh flour goes rancid fast

Grinding exposes the germ's oils to air. Use milled flour within a few days at room temperature, or keep it airtight in the fridge for up to a couple of weeks or the freezer for a few months. A bitter or crayon-like smell means it has turned.

Store wheat berries dry and sealed

Keep them in a food-grade container with a tight lid, in a cool, dry place off the floor, so pantry moths and weevils cannot get in and moisture cannot cause mold. Grain that smells musty or feels damp should not go in the mill or be eaten.

Check new grain before storing it

Look for webbing, live insects or clumps. A few days in the freezer before storage is a common way to deal with insect eggs; let it come fully back to room temperature and dry before sealing.

Gluten-free baking

A mill that has ground wheat holds wheat dust in its chamber. If anyone in the house needs strictly gluten-free food, use a separate mill reserved for gluten-free grains rather than cleaning a shared one.

Hearing and dust

Impact mills are loud enough that many millers wear ear protection, and both types throw a little fine dust, so keep the flour bowl snug under the spout.

08

Why the kit looks like this

Nearly all the cost is the mill, and it is a long-lived appliance, so it is worth buying one with a solid warranty over a cheaper one you will replace. Grain is cheap per pound, especially in larger bags, and it is the main ongoing cost. A sealed bucket protects that grain, and a scale and freezer containers handle weighing and leftover flour. You likely own a skillet, mixing bowl and rolling pin already, so the kit stops there.

Every line below is something you buy online, and the salt and oil lines finish the shopping list for the first chapati recipe. Compare the options and set your tiers in the kit. Clicking a card selects it there, and clicking the selected card again takes that line out of the kit.
